All the flavor of my favorite potato soup, minus the guilt of the carbs!
- 1 head cauliflower
- 1 medium onion, minced
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 (8 ounce) package reduced-fat cream cheese
- Combine cauliflower, onion, garlic, and broth in a slow cooker. Cook on low for 5-6 hrs, or until the cauliflower is super tender.
- Mash or puree, veggie/broth mix.
- Add cream cheese, melt, stir, and enjoy!
