Cheesy BBQ Biscuit Cups

- 8 ounces lean ground beef or 8 ounces ground turkey
- 1⁄4 cup green bell pepper, chopped
- 1⁄4 cup finely onion, chopped
- 1 cup tomato sauce
- 1 tablespoon brown sugar
- 1 teaspoon prepared mustard
- 1⁄8 teaspoon black pepper
- 1 (12 ounce) package ready-to-bake refrigerated buttermilk flaky biscuits
- 2 1⁄4 ounces shredded cheddar cheese
directions
- Preheat oven to 400°.
- In large skillet coated with olive oil, brown meat, onion and green pepper.
- Drain, and add tomato sauce, brown sugar, mustard and black pepper; simmer for 5 minutes.
- Place each biscuit in a sprayed muffin cup, pressing dough up sides, to the edge of cups.
- Evenly spoon mixture into the muffin cups.
- Bake 10-15 minutes or until golden brown.
- Sprinkle the cheese and bake 2-3 minutes or until cheese has melted.

My husband LOVED this! Without hesitation he said 5 stars. However, I did tweak the recipe quite a bit, some of it was a like/dislike thing and some was just what I had on hand. So here's what I did... - ground beef (seasoned with salt, pepper, Lawry's, and onion powder - love onions) - 1 onion sauteed (I jump start mine by doing 5 minutes on high in the microwave in one of the plastic onion shaped cases - but let it cool before trying to cut it afterwards!) - 3/4 cup Prego (oiginal) - 1/4 ketchup - brown sugar and pepper as noted - 1 can (8 rolls) Pillsbury dinner rolls - Colby/Jack shredded So, I sauteed the onion in butter separately while I browned then drained the meat and seasonings. Then I added the Prego and ketchup - just enough to coat the meat. Then on went the brown sugar (I prefer dark because it has more flavor) and in went the onions. I used olive oil spray to coat the muffin pans (8 spots) and put one dinner roll in each molding it as the recipe called for. Then I spooned in the meat mixture. Cook as directed, add cheese and cook some more and... voila! Yum! Be prepared - I don't know if the flaky biscuits would have faired better, but the dinner rolls rose quite a bit and so meat and cheese kind of made a mess in the oven - if you have deeper popover pans it'd be neater :) Anyhow, quite yummy and pretty simply to make! Try it out!
