Cheesy Baked Zucchini, Sweet Potato Patties

  • Preheat oven to 350 degrees.
  • line cookie sheet with parchment paper and spray with nonstick spray.
  • Mix first 9 ingredients together.
  • Mixture will be somewhat loose.
  • Scoop up in a 1/3 measuring cup mixture and gentle flip onto parchment paper flatten slightly.
  • You should have 5 patties.
  • Bake for 25 minutes.
  • Meanwhile cook balsamic vinegar with honey till reduced in half.
  • Remove patties gently from parchment paper and place on serving dish.
  • Pour sauce into a small bowl and dip patties into sauce.

  1. This had a really good flavor, I used fresh parmesean and olive oil. Baking 30 to 40 minutes, however is insane and the squash will be nothing but mush. I'm above 5,000 feet where it takes longer for anything to cook and mine was done in 10 minutes.

  3. These were good, but need more garlic i think. Maybe I will fry them next time too. Healthy!
     
  4. This was a real adventure in healthy eating. I followed the recipe exactly and it did make 5 patties. My DH didn't like the texture of the zucchini in the patties. He thought maybe it didn't bake long enough. I thought it was OK. Definitely serve these hot. They lose something served lukewarm. So have everything else timed to go on the table. We liked the balsamic vinegar/honey sauce. The patties are better with it. I assumed that the sweet potato was raw and peeled before grating. You might want to update the recipe with that notation. I'd make this one again. I served it with Osman's Weiner Schnitzel and watermelon for dessert.
     
  5. I THOROUGHLY enjoyed these. We are definitely Vegetable patty/cake people, and this is definitely one I will make again. The sauce was very tasty as well; nothing like anything Ive had before. This is easy, creative, and easy to follow. Thank you very much for the recipe. I think I will make these again, maybe next time making them more fattening by trying to fry them LOL :D Thanks again!
