This evolved from one of my favourite sandwiches - cheese and jam.
- 4 large ripe peaches, halved and stoned
- 150 g low-fat cream cheese
- 25 g caster sugar
- 50 g amaretto cookies, crushed
- 75 g fresh raspberries
- Place peach halves in an ovenproof dish.
- Mix cheese and sugar and fold in biscuits and raspberries.
- Top each peach with a spoonful of the cheese mix.
- Cover with foil and bake for 10 minutes at 190°C Remove foil and bake for a further 10 minutes.
