Cheesy Bacon Scalloped Potatoes

"This is one of those stick to your ribs side dishes and it's a huge hit with my family. I make it at least once a week and I like to take it to cookouts too."

  • scalloped potatoes

  • 5 -8 large baking potatoes (I use Idaho Potatoes)
  • 1 tablespoon butter
  • 12 medium sweet onion (diced)
  • 1 teaspoon minced garlic
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 2 12 cups milk
  • 14 - 12 cup colby cheese (crumbled not shredded)
  • 18 - 14 cup crumbled bacon (I use the "Real Bacon Crumbles" you use for salad toppings to save time)
  • salt and pepper (to taste)
  • parmesan cheese (sprinkled on top)
  • 14 cup breadcrumbs
  • 2 tablespoons melted butter

  • Peel and slice potatoes and set aside in a bowl of cold water.
  • Saute onion with 1 tablespoons butter until golden. Add garlic and continue to saute until garlic is lightly colored. Remove from heat and set aside.
  • In small sauce pan melt 2 tablespoons butter add 3 tablespoons flour. Stir constantly until mixture begins to bubble. Slowly add milk and stir constantly bringing sauce to a boil. Reduce heat and simmer for 2-4 minutes until sauce is thickened.
  • Drain potatoes. Spray or grease 2 qt casserole dish and add potatoes, sauteed onions/garlic, and pour sauce over potatoes. Salt and pepper to taste (you can tell by tasting the sauce). Mix well. Sprinkle bacon pieces and cheese crumbles then lightly hand mix throughout dish.
  • Optional: you can sprinkle parmesan cheese on top and/or 1/4 cup bread crumbs mixed with 2 tbsp melted butter for a crispier topping.
  • Bake at 400°F for 1 - 1 1/2 hours uncovered or until top is golden brown and potatoes are tender. Cover with foil for the first 45 - 60 minutes of the cooking time if you add the bread crumb mixture or else it will burn with this high temp/long cook time.

  2. Made for the FYC Tag Game & served as a side to accompany ham & a mixed green salad. Potatoes are revered here in Iceland & considered a requirement of every meal. Icelanders are happy even if they are simply boiled, but I prefer more flavor w/o the need to add an excess of butter. These potatoes are indeed very flavorful. Green onions are not always readily available here & that was the case again, so I subbed chopped leek for them & otherwise made the recipe as written. Thx for sharing this recipe, breezer. We liked it a lot. :-)
     
  3. These were great! I used half whipping cream and half milk to give it a more richer taste. DH sure enjoyed hisself cause he loves potatoes fixed any way. Thanks for sharing this delicious recipe!

I love any cookbook that provides pictures of the recipe you are cooking, but I tend to get most of my recipes online when I already know what I want to make because they are easy to find and I don't have to spend hours searching for what it is I have in mind. I use my picture cookbooks more for dinner planning and meal ideas. I joined this site when I found a recipe for baked mac/cheese that I liked and would enjoy getting more meal planning ideas. I tend to "get tired of food" and often find myself saying that nothing sounds good! I just need more variety!!
