Great recipe. Didn't have mushrooms, but I don't think it would have been a major taste changer. I also have to admire anyone who can make only four slices of bacon! I made the whole pound.

These were awesome!!! We did leave the mushrooms out as none of us like mushrooms, and only DH had the onions and green peppers in his, but still these were outstanding!! I think next time we'll just make a salad with this next time as these were really filling...we had hamburgers and nobody could finish the burgers but we all finished the potatoes! I also had a problem keeping the skins intact but I think I just need more practice so we'll be making this often! Thanks Oz for a wonderful recipe and congrats on the football pool win!

Excellent potatoes!! I loved having so many of my favorite flavors all together. Believe it or not, I had no butter so I added a couple of tablespoons of sour cream which worked fine. Loved them!!!

This is total comfort food. Wonder flavor combination. Love the mushrooms in this. Served this with Steak Kabobs, which is a recipe I'm working on and will continue to work on since it just didn't come out like I would have liked. Thanks Oz and good luck next week.

Excellent change from the plain old baked potato! A little extra work, but well worth the time. I loved the green peppers and onion as unexpected flavor additions... I did, however leave out the mushrooms (not a fungus fan...), but followed the rest of the recipe to the letter. The family loved it, served alongside standard-fare meatloaf. Thanks, Oz for a recipe for me to add to my "favorites" cookbook.

These are WONDERFUL!!! I halved the recipe and used three smaller potatoes instead of two larger. Found my family had drunk all the milk so used some light sour cream instead. DH even loved the mushrooms in the potato. I used red pepper instead of green because that is what was on hand, but I think the green would make a prettier presentation playing off the "reds" of the bacon. The filling was light and refreshing with the addition of the vegetables. They need NO additional seasoning of any sort....just perfect as they are.

In the words of my dear hubby..."This is PRIME time stuff". All I can say is....if ever there was a 10* star this is one. WOW! Love the bacon taste along with the rest of the ingredients. My DH is taking a potato to one of his clients tomorrow to brag about this recipe. We just loved it!!! This is a MUST try recipe! Its a Keeper in our house for sure! We had them with grilled steaks as mention in the description and its absolutely right. The best!!! Thanks so much for sharing this delicious recipe.
