Yummy cheesey appetizer with a hint of Mexican flavor. Great for parties or a quick afternoon snack. It can be prepped the night before and baked prior to serving.
- 7 ounces green chilies (your favorite brand chopped)
- 12 ounces shredded cheddar cheese (sharp is best)
- 2 eggs
- 2 tablespoons milk (skim is fine)
- Preheat oven to 350 degrees.Grease a 9" pie plate (butter or cooking spray). Spread chiles in the bottom of the pan. Layer on the shredded cheese. Scramble the eggs and milk and pour evenly over the cheese and chiles. Bake for 40 to 45 minutes.
