These are some quick and easy bars that everyone loves. They are nothing to whip up real quick and I always have the ingredients on hand.

Directions

  1. Mix together the cake mix, butter and 1 egg.
  2. Pat into the bottom of a greased 9"X13" baking pan.
  3. Mix together the cream cheese, 2 eggs and powdered sugar.
  4. Pour over the cake mixture in the pan.
  5. Bake at 325 degrees F for 35-40 minutes.
  6. Cool and cut into bars.

These bars are absolutely delicious. I took these to a gathering of 250 co-workers. Of all the desserts served, mine was the first one to disappear. I made one batch with an orange cake mix and placed a wedge slice of orange on top. I made the second batch with a lemon cake mix and a wedge slice of lemon. The third batch was with a strawberry cake mix and a slice of strawberry on top. I will definitely be making these again.

These Bars are pretty good, Next time I make them though I will add 1 or 2 tablespoons of lemon juice to the cream cheese mixture and top it with some lemon zest before I put it in the oven.

Made these as a treat for my DH to take on his hunting trip. They were quick, easy, and delicious (didn't think I'd send them without tasting them did you?)surprise. They remind me of what we used to call Lemon Chess bars. I reserved 1 cup of the crumb mixture and sprinkled on top. Thanks for posting!
