- 1 cup butter or 1 cup margarine
- 4 ounces cream cheese
- 1 cup sugar
- 1 egg
- 1 teaspoon grated fresh lemon rind
- 1 tablespoon lemon juice
- 2 1⁄4 cups all-purpose flour
- 1 teaspoon baking powder
- 1⁄4 cup fine graham cracker crumbs

Cheese filling
- 4 ounces cream cheese
- 2 tablespoons sugar
- 1⁄2 teaspoon grated fresh lemon rind
- 1 egg yolk
- 1 tablespoon half-and-half
directions
- Cream butter, cream cheese and sugar until blended.
- Add egg, lemon rind and lemon juice; mix well.
- Combine flour and baking powder and add to first mixture and blend well; cover. Chil for at least 1 hour. Shape dough into 1-inch balls; roll in graham cracker crumbs. Arrange on ungreased baking sheets.
- With finger make an indentation in center of each cookie. Fill with level 1/2 teaspoonful of filling (See below).
- Bake at 350F for about 20 minutes. Remove to wire racks to cool; store airtight.

- Beat together all filling ingredients until smooth.

OK lets see...My name is Diane and I'm married to a wonderful guy -- going on 20 years. We have 2 kids -- 1 daughter and 1 son a 70lb german shepard, a fat cat and a very snobby cat! I work a couple of days a week in the Loop and the rest of my time is spent sitting at the kids sporting events. I love to try new recipes. Luckily, hubby will try just about anything.
