When I started to make this I thought the whole idea of adding sour cream on top without really cooking it was weird but I just went for it. It turned out really creamy and wonderful. I did cook it another 10 minutes and still feel like the middle was still a bit jiggly but the edges were getting a bit brown so I took it out. After setting for awhile it was mostly all set up the middle was still a bit soft. I ate mine with cut up strawberries but everyone else ate it plain. Great tasting cheesecake with a great creamy top.

  1. Beat cream cheese, 2/3 cup sugar, 3 eggs, and 1/2 teaspoon vanilla with mixer until smooth. Pour into well greased 9 inch pie plate.
  2. Bake 22 to 25 minutes at 350 degrees F. Turn oven off. Remove cheesecake and cool for 5 minutes.
  3. Combine 3 Tablespoons sugar, sour cream, and 1 teaspoon vanilla. Spread over warm cheesecake and return to oven for 5 minutes.
  4. Cool and refrigerate.
