An easy, hearty soup recipe that I got from a friend. Use whatever veggies you like or have on hand.
- 1 lb cooked ground beef
- 3 cups water
- 4 cups mixed vegetables (1 cup each of carrots, zucchini, celery, potatoes, onions, corn, etc.)
- 1 (28 ounce) can diced tomatoes
- 1 (10 1/2 ounce) can beef broth
- 1 bay leaf (optional)
- grated cheese
- Combine all ingredients, except cheese.
- Boil for 20 minutes.
- Sprinkle cheese on each serving, just before serving.
