I've been making this recipe for years, but never rated it! It's AWESOME! Velveeta now makes a Sharp Cheddar flavor and it made it even better! My kids love it, husband, EVERYONE! I often take it to pot lucks at church and everyone always asks for the recipe. Thanks for posting it!
Yummy! My whole family loved this soup. It would be great also to use wild rice instead of potatoes next time.
Wow!!! This soup is awesome, my families new favorite.Thanks for sharing.The only thing I changed was I used home made veggie broth with low sodium chicken bouillon because I was out of chicken stock. It was delish.We will be adding it to our regular winter dinner list. Thanks.
What an absolutely delicious comfort food!!!!! I even forgot the last step with the sour cream. So delicious! I just hope the fat content wasn't correct.
This recipe is easy to convert to a special diet, which is a big plus. I subbed out dairy-free cheese, sour cream, and margarine, as well as using dairy-free chicken soup stock, and it turned out perfectly. Looking forward to making this again!
My husband and I think it is really good and I will add this to my collection. If I had to describe the soup, I would say it is "queso dip gone healthy"! Although, you can't really taste the veggies. We dipped some homemade soft prezels in the soup and it was excellent. I think it would also be yummy in a bread bowl or with a side of sourdough bread. Thanks!
Very good soup. The family enjoyed it just as written. Did have to add some liquid to the butter and flour mixture as mine just clumped up. But that did make it work.
WOW! I think this stuff is awesome and very easy to make even with its 40 minute prep time, but worth it. I used 4 cooked ground beef patties left over from my daughters party. I used 2 cups beef broth and 1 cup chicken broth instead of 3 chicken. And I also used 1 cup Velveeta and 1 cup Cheddar cheese. Otherwise, I followed recipe to the 'T' and will definitely make again!
Even my husband said that he couldn't think of anything to change about it (which is unusual). The only change that I made was the use of frozen prepared meatballs in place of browning meat, just because I had them in the freezer. I will be sure to use a bigger pot next time because I started this in a 3 qt pot and had to transfer it to my stockpot about halfway through because I was making a big mess that way.
This soup really hit the spot tonight. It made a lot of soup, but that's great because now I have lunch tomarrow! The kids even had seconds. Thanks for sharing your recipe, we enjoyed it very much!
