- 2 lbs ground beef
- 1⁄2 cup celery, chopped
- 1 green pepper, chopped
- 1 onion, chopped
- 4 cups potatoes, diced
- 3 beef bouillon cubes
- 3 cups water
- 6 tablespoons flour
- 4 cups milk
- 2 cups shredded cheddar cheese
directions
- Brown ground beef in large pot. Drain off grease. Add potatos, onions, peppers, celery, salt and bouillon cubes. Pour in water and bring to a boil. Reduce heat cover and simmer for 15 to 20 minutes or until vegetables are tender. Whisk flour into milk and slowly pour into pot with meat and vegetables. Stir until soup is thickened slightly. Mix in cheese and stir until melted.

This is the easiest and tastiest soup! I leave out the peppers as my family doesn't care for them and are also overpriced in the cooler temps.This is great on a cool fall day or when its snowing outside. Its the best with cut up pickles and oysters crackers on top! I double the recipe so we have leftovers as it warms up perfectly. I made batches of this for a showchoir party, it went over so well that some of the kids actually request this when we have parties. Thanks for the recipe!!
