  • Preheat oven to 425 degrees.
  • Sift flour and salt. Cut in 3 tablespoons of shortening until the mixture looks like corn meal.
  • Cut in the rest of the shortening until the particles are the size of small peas.
  • Add cold water by the tablespoon, mixing with a fork, until the dough forms a ball.
  • Roll the dough out on lightly floured board. Dough should be 1/4-inch thick and 6 inches square.
  • Sprinkle grated cheese (2 tablespoons) and 1/4 teaspoon of paprika on dough.
  • Fold the square in half, pinch the edges together and roll out again.
  • Sprinkle with 2 tablespoons grated cheese and 1/4 teaspoon paprika. Fold; repeat with grated cheese and paprika two more times.
  • Roll dough to 1/4-inch thickness. Cut into strips 1/2-inch wide and 3 or 4 inches in length.
  • Bake on ungreased cookie sheet about 10 minutes or until cheese straws are golden brown.
