A delicious and hearty souffle. You can substitute broccoli for spinach.


  1. Preheat oven to 350.
  2. Cook spinach.
  3. Mix cheeses, butter, spinach, and egg yolks.
  4. Add flour and baking powder and mix.
  5. Beat egg whites until stiff and fold them inches.
  6. Pour into a buttered 2-quart souffle dish.
  7. Bake 1 hour.
