  • 12 cup oatmeal
  • 1 teaspoon salt
  • 12 cup butter
  • 4 -6 cups water (or consomme)
  • 2 potatoes, peeled and cut into thin slices
  • 2 cups grated emmenthaler cheese
  • 1 dash nutmeg (optional)

  • Saute the oatmeal and salt in half the butter until golden brown.
  • Add the water; bring to a boil. Cook over low heat, stirring occasionally and adding water if necessary, until the oatmeal is cooked into a gruel. This will take about 90 minutes.
  • Add the sliced potatoes. Cook about 30 minutes until they are tender.
  • Stir in the grated cheese, remaining butter and nutmeg if desired. Add additional hot water if it's too thick.
