It is a very pretty dish. I increased the rice to 2 cups as I found there was not enough for 2 layers with just 1 cup. I used 1 cup cheddar and 1 cup swiss cheese. It was very easy to make and my husband loved it with all the onions (I used red) and green peppers (1/2 green 1/2 red)!! Thanks for posting
This turned out lovely! I didn't have any fresh green pepper in the house, so I substituted 2 tablespoons of vegetable flakes. The shredded cheese I happened to have on hand and used was a monterey jack/cheddar blend. With the exception of the onion being somewhat over-powering, we really enjoyed it. Next time, I will use about half of a small onion rather than a whole medium onion. It turned out to be a very pretty and appealing dish, especially for something that was so quick and easy to throw together. Thank you for sharing this recipe SmartLilPunkinCookie!
This was not an explosion of flavor as I often like things to be. But it was nice and creamy comfort food. It was rice and cheese. I think that it needs more salt and could possibly benefit from some more vegetables added in. But it was a nice plain side dish.
Texture was very light and soft. I found the overall flavor a bit on the bland side and would recommend a cheese or cream sauce to top this culinary delight
