Cheese Muffins (Proja)

"This is Serbian national food. We usually serve proja hot or cold with yogurt. There is one more way to make this meal--instead of 1 cup of cheese put 1 cup of ground spinach."

  • Mix eggs, yogurt and oil in big bowl.
  • In another bowl, mix flour, corn grits, baking powder and salt.
  • Combine dry and wet ingredients and finally add cheese.
  • Fill greased muffin tins 2/3 full.
  • Bake 30-35 minutes at 480°F (250°C).

  1. I made these yesterday for an ethnic food potluck I had with my university students. I'm Serbian and love proja. These were amazing, so light and fluffy! A nice contrast to the sometimes dense and dry proja that others make. I wanted to spice them up a little bit, and although not as traditionally Serbian, I added in garlic, onions and spinach. I also served them with tzatziki and ajvar (a Serbian roasted red pepper dip). Absolutely delicious, thank you Ivana! I will definitely try them next time with feta.

These are simply awesome, I have made them now 5 or 6 times and have started experimenting, I withhold 1/4 cup of cottage cheese and put in 1/4 cup crumbled feta, I cook them in a pre heated cast iron biscuit pan with a little oil in the bottom and these are out of this world. We have been serving the left overs the next morning warmed up and cut open to resemble sandwich flat bread and putting a slice of fresh ripe tomato and eating like a sandwich. Will have to try with the spinach next.

I live in Serbia,Europe. I am married and I have one 12-year old boy,wery picky. I like to cook specially muffins and cookies and that is something he never refuse. The city I live in is Novi Sad,that is beautiful city on river Danube. I'm full time working mom,working at department of fruits and vegetables. Creative and healthy work at same time.I started to work there 3 years ago,from then fresh salads and a lots of fruits are on the menu every day.
