Cheese Enchiladas

  • In large saucepan, combine the first six ingredients.
  • Bring to a boil.
  • Reduce heat; simmer uncovered, for 4-5 minutes or until thickened, stirring occasionally.
  • Spoon 2 T sauce over each tortilla.
  • In large bowl, combine the Monterey Jack, 1 cup cheddar cheese, onions, sour cream, parsley, salt and pepper.
  • Place about 1/3 cup down the center of each tortilla.
  • Roll up and place seam side down in 1 greased 13x9x2-inch baking dish.
  • Pour remaining sauce over top.
  • Bake, uncovered, at 350 degrees, for 20 minutes.
  • Sprinkle with remaining cheddar cheese.
  • Bake 4-5 minutes longer or until cheese is melted.
  • Garnish with lettuce, olives and sour cream, if desired.

  1. i have made this recipe MULTIPLE times for cinco de mayo and it is ALWAYS a hit. other kinds of cheese work just fine - and btw you can make twice as many as the recipe says.
     
  2. These are very good. They come together very quickly and easily. I followed all the ingredients. Made for AZ/NZ swap.

  4. this was wonderful although the sauce was not spicy enough for us so I added in 2 teaspoons crushed chili flakes and increase the garlic to 2 tablespoons and also increased the cumin amount, this is a great vegetarian meal, thanks for sharing hon!
     
  5. We loved these! I added a little sugar to the sauce, we like sweet sauces. The monterey jack cheese is really tasty in this. Next time I'd like to try already roasted chicken from the market in these. So easy and great tasting! Thank you.
