this recipe should get bonus points for being so incredibly versatile! i really wanted to try this with black beans and corn but only ended up having pinto on hand. i sauteed my beans with a chopped onion and some spices.. (a little cilantro and some pendry's chile seasoning) before layering. because of the addition of beans i only used about 8oz of a "mexican" blend of shredded cheese. i topped it off with my favorite green enchilada sauce (las palmas or hatch). mine cooked for about 20 min. it was delicious! i will definitely be making variations of this again!

Very good and very easy to make! I added some leftover canned corn and a can of black beans to the sauce (I just mixed the sauce, the chilies, beans, etc all together and then spooned it all on) I didn't put the green onions on because we didn't have them. I think the beans and corn, especially the beans were a really good addition. We ate this w/ some sour cream and diced fresh tomatoes on the side. GREAT--my whole family really liked it. Thanks!

Very good and very easy. I added black beans and corn the first time and added chicken to the mix the second time. This is a nice versatile dish. I have to say though, the recipe is only as good as the enchilada sauce, a good sauce makes a big difference.

My whole family liked this recipe. I used medium enchilada sauce and I did half sharp cheddar cheese and half pepperjack so it was medium spicy. Nice simple meal and wonderful flavor! I made it in a 9x9 pan and it served three adults and two children with one piece left over. Thank You!
