- 1 cup grated cheddar cheese
- 3 tablespoons flour
- 2 cups ground chicken or 2 cups turkey
- 1⁄4 teaspoon salt
- 1⁄2 cup finely chopped celery
- 2 cups milk
- 1⁄4 cup finely chopped scallion
- 2 cups stock
- 1⁄4 cup finely chopped bell pepper
- 1 tablespoon olive oil
- Cook ground poultry in oil, add and wilt veggies.
- Blend in flour and salt.
- Slowly add liquid.
- Cook and stir over low heat until thickened.
- Add cheese and continue cooking until it melts.
