Cheese, Cheese & Onion, Beef & Cheese Enchilada Fillings

"This is the filling to my Enchilada Sauce Recipe. The amounts of each is just estimates. This all depends on how much you put in each tortilla, how big your tortillas are and if you use just one, two or all three choices. If you make all three you can use toothpicks to mark which one is which. None for one, flat for another and round for the last."

  • Cheese

  • 1 (16 ounce) bag cheese, finely shredded
  • Cheese and Onion

  • 1 (16 ounce) bag cheese, finely shredded
  • 1 small onion, finely chopped
  • Beef and Cheese

  • 1 lb hamburger, cooked and drained (I use a food processor after cooked to get it very fine.)
  • 1 (16 ounce) bag cheese, finely shredded

  • Mix your ingredients, Fill your tortillas with a moderate line of one of the above selections, Fold in half twice, Place in greased cake pan, Sprinkle cheese on top and bake at 350 degrees.

I was in a crunch to make dinner tonight and had the ingredients on hand to make the beef and cheese (and onion) version of these along with Texas Red Enchilada Sauce Recipe "#42094101" and it was fabulous! I also make beef and cheese nachos using the finely ground beef mixture with a white cheese sauce I purchased from Sam's Club. Easy, yet delicious!
     
  2. Excellent recipe for an easy to make meal! I made the cheese and onion filling and also added a tomato - at my daughter's request! I made pockets out of my tortillas, and cut back on the cheese for the topping a bit - but other than that this was made as stated. A easy and simple recipe - thanks! FT:-)(I also added jalapeno peppers to the top on serving!)

I am no longer single. I found me an amazing man and we married, it has been almost 3 years now. My little girl is 13 now and she is amazing. I went to school and got my Bachelor's Degree in Criminal Justice and I work for the State as a Parole Officer now. I have realized that I hate cooking. I really do hate it. Luckily I married a man who loves to cook. He hates to bake, and I actually do like to bake. So I am what one would consider a somewhat mediocre baker. I still think about my Zaar Angel all the time. She knows who she is. I do enjoy to crochet, I do that a lot here lately. I use to do counted cross stitch, yet I don't do that anymore. I can't watch TV as well as I can while I crochet.
