  1. In small bowl, combine cereal and buttermilk.
  2. In medium bowl, beat egg until frothy and stir in oil and cereal mixture.
  3. In large bowl, combine remaining ingredients.
  4. Make a well in centre and pour batter into well. Stir to moisten. Batter will be lumpy.
  5. Fill greased muffin cups > full. Bake at 400 degrees for 20 to 25 minutes. TIP: Nice when served warm, but let stand 5 minutes first.

Very good. Here's the secret to enjoying these; eat them warm. Popping them into the microwave for about 30secs usually does the trick for me.
