This was fabulous!! I made two seperate balls, rolled them in ground walnuts, and sprinkled paprika on top. Went easy on the cheddar, heavy on the green pepper, and used regular onion cause I didn't have green onion. I also added a bit of garlic powder and black pepper. OHHHH, SO GOOD!!! Glad I made two seperate balls because I made it to take to a family get-together, ate almost one entire ball myself, but I still have one to take! Served with TownHouse crackers. Thanks, Di!! ~Manda

Thanks for the great recipe. I gave this and #73518 to friends for Christmas. Because I was packing this in Christmas themed canning jars, I cut the paprika to 2 tsps. and mixed it in with the other ingredients. Everyone loved it, including my family. I'm making it again tonight for New Year's Eve. I love the combo of onion, green pepper, and pineapple as well as the ease of preparation. I'm putting some in the freezer this time to have on hand for drop in guests.

I had never made a cheese ball before and had a bit of trouble because the directions were a bit unclear. I wasn't sure how to mix well - is that by hand? In a food processor? I used the plastic S blade of my FP and everything worked out well mixing the first 6 ingredients, but I continued using the FP for the pineapple etc. That is when I had problems. The mixture which was thick prior to adding the pineapple, gr. onions and gr. peppers became very runny and I couldn't form it into a ball. I think mixing those ingredients by hand or with a fork would work better than using the FP. I had to add more cream cheese and shredded cheese to rescue it. I still couldn't form it into a ball, so I put the whole mixture into the fridge to chill. After a couple hours, I was able to form into a ball. Since I had to add extra cheese and cr. cheese, I had alot of it, so I froze the remainder. It freezes VERY well and once thawed it is great to spread on crackers. I rated this a 4 because of the taste. It was VERY good, but I rate the directions a 3. Maybe they could be made a bit more clear for those who are not experienced making a cheeseball. Thanks DI'B's. Will make this again.
