Very good recipe! I do think some diced green chilis would take it over the top but the other 2 here were very happy with it as is. I made an extra 1/2 cup of sauce in view of the comments and that provided plenty of moisture in my opinion. I also put closer to 1 cup of cheese on top. Thanks for sharing your recipe. Made for PRMR.

Very easy and good recipe. As other reviewers commented, I too doubled the sauce, so I had a bit extra, and used more cheese. I really enjoy enchilada recipes that do not used canned sauce. Thanks for the post!

cheese enchiladas ahve always been my favorite at a mexican restaurant, so glad to have this to make. I left out the can of beans, since i love them just plain but did add some diced chilis to the cheese

Very good enchiladas. If you like allot of cheese, this is for you. The only change I made was to microwave the tortillas to make them before dipping them into the sauce. Excellent!!

Very quick and easy to do, and with things you usually have around the house, but much too dry. I made more sauce, after what the other reviewer said, but they were still too dry after baking for us. I'll have to put salsa over the leftovers or something like that.

Lainey, Lainey, Lainey...THANK YOU! I can't believe how easy this recipe is! Do not underestimate this recipe. It is fabulous! I was worried about the amount of onions in this- I just made sure to cook them long enough to carmelize. There was also just enough sauce to cover the corn tortillas with no extra to put on top- No problemo- It didn't need it! Gracias!
