Cheese and Grainy Mustard Sauce

"Serve with a selection of cooked seasonal vegetables. Place vegetables in an ovenproof dish, spoon the sauce over, sprinkle with extra grated cheese and bake in a hot oven until golden. Alternatively, broil or bake chicken joints, spoon over a little sauce, then brown under the broiler. To prepare ahead: Complete recipe, cool quickly, cover and refrigerate for up to two days. Bring slowly to the boil and simmer for 2–3min."

  • Melt the butter in the milk in a saucepan and bring to a good rolling boil.
  • Put the flour in a food processor and, with the machine running at full speed, pour in the still bubbling milk.
  • Process for 30sec, scrape down the sides of the bowl with a spatula and add the grated cheese, mustard, salt and pepper.
  • Process for a further 30sec; serve.
