  1. Saute red peppers and onions in shortening until soft. mix ground beef lightly with saltines, salt, paprika, pepper, eggs and milk until well blended. Add pepper and onion mixture then the cheese cubes. Pack lightly into oval shape and score top with criss cross pattern. Bake at 350 degrees for 1 hour or until brown.

Awesome meatloaf!!! I made a mini loaf for DH and I to have for dinner last night. He doesn't care for any type of bell pepper, so I left it out, didn't saute the onion in shortening (just added the raw minced onion to the mix). It included butter in the ingredient section but didn't say what to do with it in the instructions, so I just guessed and spread it on top of the loaf, after scoring it. Towards the end of the cooking time, I added a little pick of ketchup for a topping. We really enjoyed the added seasonings that I don't normally have in my mix. Thanks so much for sharing the recipe Jtrillich!! Made for Spring PAC 2013.
