My Husband and I really enjoyed this recipe. It was a snap to put together. I left out the croutons and used elbow macaroni as I could not find mini lasagna noodles. It was delicious and we have lots of leftovers. Thank you for the recipe !
The whole family loved this soup. Although I'm not sure it's soup! It was very thick, more like goulash. I just used penne noodles and we didn't use the croutons as this is a texture issue with DH. I also added about 10 leaves of fresh basil and a bit of red wine. Will make again, very good.
This is sooo yummy! You get to enjoy the taste of lasagna without having to spend a bunch of time making it. I use regular lasagna noodles and either break them up or cook them first, then cut them into strips. I also add lotsss of cheese, that's my favorite part. My family loves this and my husband's friends! Thanks for sharing.
We thought this was really good! After it sat and cooled, it really thickened up and was more like a lasagna stew. That made it easier for me to take to work, so I didn't care. Thanks for sharing. Will definitely be making this again.
What a great idea! I used this concept, but the ingredients for I Lost My Noodles! Low Carb/South Beach Eggplant Lasagna. I topped with low fat mozzarella and parmesan, then grilled until yummy & brown. Can't wait to make this again. Thanks for sharing.
Like others, I spiced it up (lots of garlic and salt). It was warm and yummy!
Comforting, easy, and pretty quick. I added more garlic, and used broken lasagna noodles for the pasta. I topped ours with the cheese just before eating, and served with fresh french bread. I agree that it was just a tad bland, so I will add salt next time. Overall, very tasty, and makes a lot of good leftovers.
This was good and easy to make. I followed the recipe as written other then I didn't have mafalda pasta, so I used bow tie pasta like others. I also didn't add the croutons as I didn't have any. We did think it could use more flavor so I added four bouillon cubes and a bit of salt.
This was delicious soup. I added some green peppers to it and instead of the 2 cans of tomato, I subbed 1 for a jar of pasta sauce and it worked out just fine. I also didn't use the croutons b/cuz we had garlic bread . Oh one more thing...I wanted a thicker soup so I cooked mine longer so that the pasta soaked up most of the sauce. It was great! My kids asked to make it again. Thank for a recipe that tastes like Lasagna without all the hard work of real Lasagna :)
Yum, YUM! This soup was so good! I couldn't believe how quickly it came together and how much flavor it had. Often times I soup doesn't have great flavor until the next day. Not this soup. It was flavorful immediately. Since I made this on a Monday night after work, I opted not to do the crouton/under the broiler step and instead just put cheese on the table for each to add to their bowl. Otherwise I didn't change anything. My husband is still talking about how good this was. thanks for sharing such a great recipe!
