Yummm, I made this for Thanksgiving and gilded the lily by topping it with more cheese and putting it in the oven to get nicely melted and gooey. Super simple and really tasty. I used 3 *huge* Russets and maybe should have added 2 cans of the soup but we all enjoyed the flavor's as they were.
Very good and simple. We really enjoyed this. I used instant potatoes buds, just to try it and it worked out well. I will have to try this again when I have some leftover mashed potatoes. Yummy! I used instant mashed potatoes because I didn't have any homemade ones already and didn't want to make them just for this recipe. This was fantastic. So easy and delicious. I'm usually not a huge mashed potato fan, but I would definitely eat these any day. This is going into my keeper file! Thanks for posting.
I used boiled mashed red potatoes for this recipe. The cheese soup really added a rich, cheesey flavor. I used a bit more than 3 cups of mashed potatoes so I added some skim milk and a bit extra fat free sour cream. Even though I used FF saour cream, the taste didn't suffer. I sprinkled this with paprika to enhance the yellow color. This is great for my kiddos because they love anything yellow-orange and cheesey! Thanx for sharing!
So good, and easy to put together! REALLY creamy and rich! Kids loved them :) Just don't tell the one that it has sour cream in it -- she claims she hates it :)
