  • Spray large frying pan with cooking spray.
  • Add chicken; cover.
  • Cook on medium-high heat 2 to 3 minutes on each side or until browned.
  • Remove from pan.
  • Add vegetables and water.
  • Bring to boil.
  • Stir in stuffing mix just until moistened.
  • Top with chicken and cheese; cover.
  • Cook on low heat for 5 minutes or until cheese melts.
  • Variation For a flavour twist, try this recipe with different frozen vegetable blends: Itlaian Style, Stir-Fry, California or Mexican.

  1. I just got done eating this for dinner and it was pretty good. I followed the recipe exactly as written except that I seasoned the chicken with poultry seasoning before cooking. I was worried that the stuffing would be too moist but it turned out perfect. I would like to give it 5 stars but the only problem that I had is that the chicken took quite a bit longer to cook than the recipe suggested. I cooked it for 4 minutes on each side at the beginning and then it took a good 8-10 minutes for it to be finished at the end. By that time, the stuffing and veggies on the bottom had burned slightly. My husband and son thought that was the best part, though. Go figure. Thanks for posting! It really was a very simple and very tasty recipe for the amount of ingredients it included.
     
  2. I really like the combination of simplicity and taste with this meal! It's great to find a recipe that doesn't have a creamed soup in it!! It's not fancy cuisine taste, but it's good enough. I've made this recipe a few times now. The first time with just the fresh veggies I had on hand and the second with a combo of fresh and frozen. I have to say I liked it a lot more the second time when I had a combo of like 7 veggies in it (frozen green beans, peas, cauliflower, and fresh mushrooms, red pepper, cut carrots and brocolli). I thought some of the veggies may be over or under cooked by doing fresh and frozen, but it came out perfect! I added a little more water because I put a little extra veggies in it. Only reason I did was because the first time I made it a few parts of the stuffing didn't get watered. I didn't use the cheese on top, personal preference. The second time we had it though, we added a little grated parmesan cheese (not from a jar), and I have to say, it was pretty good. Only other thing I might suggest to watch out for is if you have thick chicken breasts. You may want to cook them a little more than 3 minutes on each side before steaming them with the rest of the meal. Very excellent, quick meal and this will definitely make it into our cheap and easy meals we make very often!
     
  3. Very easy to make -- and clean up!! Used just a regular frozen mixed veggies -- nothing special. Great way to use what is already in my pantry/fridge/freezer!
     
  4. For how easy this is, it is exceptional. I also didn't have chicken stuffing mix and substituting rice and chicken stock worked very well. I also steamed my veggies instead of cooking them in with everything, then added right before the cheese. The only thing I would add is a very small amount of salt.
