Found a fix for people who discovered that this wonderful bread fell in the middle after rising. Use only 1 1/8 cups water! Checked the proportions of water to flour in my Zojirushi bread machine and found this recipe had about 1/8 cup more than was recommended for a white loaf this size. I know I'll be making this one on a regular basis!

I had high hopes for this recipe. Followed directions to a "T". Everything looked hopeful until the dough started the baking process. The dough was rising so high, it lifted the top off my bread machine! Therefore, I couldn't bake it in the machine. I took the whole pan out of the machine and thought I would try to bake it in the oven, but when I did, the middle sank. I put it in the oven anyways and the bread pan fell over spilling dough into the oven. What a catastrophe. For a minute there, I thought I was on the I Love Lucy show with the huge bread monster coming out of the oven. I maybe will try making this again, but will bake in the regular oven instead of the bread machine. Too bad cause it smelled really good.

I just made it today and it was super! I did take the advice of others to reduce the water 1/8 cup for fear of it collapsing. It didn't. The taste was better than I expected too. I used the dough setting and put it in a glass bread/loaf pan. I baked it with the advice given on the message boards and it was nicely browned on top and done on the inside too. My family didn't want to wait for it to cool because they were tempted with the toasty cheese smell. I haven't tried it as toast yet, but I will. This one is a keeper!
Thanks for sharing it!

Love it! Instead of using the full amount of white bread flour, I subbed one cup of whole wheat flour, then the other 2 cups of bread flour to add some "wholesomeness". :) Everyone here enjoyed each slice of this light, full loaf. Thanks Geema! **I used 2 teaspoons of jarred yeast which worked just fine.

Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges. As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic. I shouted and rebelled and cried. But the good news is that I can control my glucose levels simply by eating very low carb. What a complete turn around it was to pass up all my high carb vegetarian foods like grains, and veggies and embrace meat! I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.

The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain. I thank God that I am so much better today after more than two years recovery, with total mobility and just some minor pain in my arms and hands. Cooking and communicating here was not really on my priority list. But, I am back in action and ready to cook, take photos, and enjoy this wonderful community of friends.

My husband and I continue to enjoy our grandchildren and being closely involved with their day to day activities. I am also the proud owner of a sweet grey and white cat who came to my door as a little kitten 6 months ago. Her name is Bonny and you can read her story here: http://www.theanimalrescuesite.com/clickToGive/ps/3/g7hopubcqxji7ub0y6fg.

When I have time for myself, I love to do all things artistic...drawing, pastels, paper craft, scrapbooking, and most recently jewelry making. I have set up a website on ETSY ( shown on this page by my website)and you can go there and see my creations.
