This recipe is from "Light Take Five" cookbook. Excellent side dish!
- 6 medium potatoes, cooked NOT peeled
- 2 tablespoons green onions, chopped
- 1 cup sharp cheddar cheese, shredded
- 1 (8 ounce) sour cream
- 1 teaspoon salt
- Slice potatoes and place in greased 9x13-inch baking dish.
- Mix remaining ingredients and pour over potatoes.
- Bake at 325 degrees for 30 minutes.
