Cheddar Bacon and Apple Panini

Sharp, sweet and smoky. A hearty sandwich that goes perfectly with tomato soup on a cold day or fresh fruit in the summer.

  1. Heat panini press to medium-low heat.
  2. Spread Dijon on 4 slices of bread. Top with slices of Cheddar, 2 pieces of bacon, apple slices and additional Cheddar. Place the remaining bread on top.
  3. Place on panini press and cook until cheese is slightly melted and bread is browned and crispy.

Scrumptious lunch! I used homemade whole wheat bread, turkey bacon, and instead of dijon I used Miracle whip for some extra tang. I grilled it up on my George Foreman for a great summer lunch. Thanks, KelBel!

Made these for breakfast this morning; they come together beautifully, look very appetizing, and the smell is awesome. This made a VERY hearty sandwich (I used small French bread loaves); Hubby will have one in his lunch tomorrow too, and DD will re-heat & finish hers for lunch today! I subbed Braeburn apples for the Grannies, and they held up well under the heat. Next time I make them, though, I'll use mild Cheddar and honey-mustard; the Dijon didn't sit well with my kids or me--too tangy and didn't seem to compliment the apples & cheese the way I expected. My "panini" maker is two cast-iron skillets nested together--works very nicely. I brushed the pans with olive oil first which gave a nice glow to the finished product. Thanks for a very nice recipe! It's one I'm sure we'll play with and "update" for our tastebuds. Sorry I couldn't rate it any higher (I wanted to!), but it just didn't knock our socks off (which is MY scale for 4- and 5-star recipes).
