  1. In a large saucepan, heat butter. Sauté onions, 4 minutes.
  2. Add potatoes, corn, chicken broth, thyme and 2 cups water. Bring to a boil and cook until potatoes are just tender, 8 minutes.
  3. Add half and half and cheese and cook over medium heat, stirring, until cheese is melted, about 3 minutes. Season with pepper and serve.
