Chawan Mushi Japanese Soup

Chawan Mushi is a great steamed custard soup. It's a Japanese appetizer or side course. I have had it with different "main" ingredients such as seafood, vegetables, or meat, and always find it to be a truly delicious dish with a vibrant and surprising texture and flavor combination. Server it as soup, or as the last course of a sushi dinner. Impress your guest with a healthy and flavorful new recipe not common in Japanese menus .

Directions:

Stock.

inside a medium bowl mix

1 yolk.

3 eggs

500ml water.

1 tablespoon of sake

1/3 tablespoon of soy sauce.

1 tablespoon of mushroom stock (soak dry mushroom in water).

a little of salt to taste (a pinch should suffice, or no salt if using salty stock).

inside a medium bowl mix the following.

3 mushroom that have been soaked for the mushroom stock.

150g no fat chicken or skin.

a little of Kamaboko(fish past) about 1/4 of a small spoon.

10 shrimps cleaned

Shrimp and chicken can be cubed or cut in long slivers

Please pour the contents of both bowls into one.

Steam with low flame for 15 min until egg cooks. Let sit for a few minutes.

before serving. Garnish with parsley or seaweed , alternatively some people like to sprinkle some black pepper before eating.
