  1. Mash potatoes and mix in cottage cheese, sour cream, onion powder, salt, and pepper until smooth.
  2. Spoon into a 2 1/2-quart casserole that has been sprayed with Pam or greased with butter.
  3. Top with melted butter and slivered almonds.
  4. Bake at 350° for 30 minutes.
  5. This can be made in advance and heated later.

Excellent potato casserole! I only did half the recipe. Very much like another mashed potato dish I used to make that was loaded with sour cream. Liked the cottage cheese in this. (The curds mostly melt into the potatoes) My slivered almonds in the cupboard somehow morphed into sliced almonds :) so that is what I used. Served as a side to your Recipe #399884. Made for Spring 2010 PAC.

Made for PAC Spring 2007. This was very tasty -- what was unexpected was the VERY thin consistancy of the finished product !! I think my interpretation of "6 medium potatoes" may have been off -- it might help to say "2 1/2 or 3 pounds",of cooked potatoes. I used red - which are usually good in casseroles, and the taste was quite different, but the "soupiness" was a tad off-putting. I did expect something more like garlic mashed or other enhancing flavor without change in consistancy. Thanks for sharing, ElaineAnn. Janey Had a goodly amount left-over, which were firm when cold. Did the roll in crumbs bit (had a large bag of crostini crackers, with LOTS of tasty crumbs to use). Was afraid to make individual portions, as cold potatoes would likely melt as heated. Melted butter in non-stick pan. toasted a layer of crumbs, then added the potatoes like a pancake. Warmed gently for 5-6 minutes, then had to slide onto a plate to turn, and had sprinked crumbs on top prior to "flipping" - and made a tasty side for sauteed sausage and veggie toss. Nothing wasted -- DH and i ate THE WHOLE THING ! Janey
