- 3 large red peppers
- 6 ounces feta cheese
- 2 tablespoons pine nuts, toasted
- 1 tablespoon olive oil
directions
- Cut peppers in thirds and remove seeds. Place cut side down on cookie sheet. Broil until skins are blackened and puffed. Place peppers in a covered casserole and let stand for 10 minutes to steam. Remove and peel.
- Place all ingredients in the food processor and blend. Chill until ready to serve.
- Serve with crackers or fresh vegetables.
