It's good. Not great, but good.
I used chicken broth in place of the water and am glad I did.....would've been way too bland otherwise. I also did not peel my potatoes and added paprika for flavor. A good basic recipe but it for sure needs added flavor.

I'm rating it now, but may change my mind tomorrow-- you know how soup gets better with time! It was bland-- but I did make it for the kids, not for the adults. I will use a can of chicken broth for part of the water, and sharp cheddar for the cheese, for next time. I kept thinking how good some celery and carrot chunks would be, but then the kids would never eat it...
Simple and basic, yet very good! Nice and thick! I, too, like mine with some chunks of potato, so I used a masher to better control the texture. I added some smoked paprika for a little extra depth in flavor. I think I'd use chicken broth (or add chicken broth base) to the water next time. We love potatoes, so we'll be enjoying this soup often this coming winter! Thanx!
I made this last night and thought it was really good. Mine took on a velvety texture and didn't have any overpowering flavors. It will probably be even better today, which gives me a chance to go buy some crusty bready! Delicious! (Although my husband and daughter wouldn't eat it, not soup people).
