- 44.37 ml extra virgin olive oil (Spanish preferred)
- 226.79 g medium mushroom, stemmed, quartered
- 4-6 garlic cloves, peeled and thinly sliced
- 9.85-14.78 ml fresh lemon juice
- 29.58 ml dry sherry (DO NOT use cooking sherry!)
- 59.14 ml vegetable broth
- 2.46 ml spanish paprika
- 1.23 ml crushed red pepper flakes
- salt, to taste
- fresh ground black pepper, to taste
- 14.79 ml fresh flat leaf parsley
- 2 lemon slices
directions
- In a saute pan, heat the olive oil until hot but not smoking. Saute the mushrooms for about 1 minute, add the garlic and cook 1-2 minutes more being careful not to burn!
- Add the remaining ingredients except for the parsley and lemon slices and simmer for 2 minutes.
- Garnish with the fresh parsley. Serve with lemon slices. Scoop the mushrooms onto your bread and enjoy!

These were the best champignones al ajillo I ever had!<br/>I used Santo Domingo Mild Spanish Smoked Paprika (Dulce Pimenton de la Vera) and I suppose this was the most important secret of this delish.<br/>I did not use broth but simple 1/2 teaspoon powder for broth.<br/>Thanks a lot for this recipe!
