Champagne Pork Chops With Lemon and Parsley

- 4 pork chops, thick cut
- 2 garlic cloves, minced
- 2 tablespoons parsley, finely chopped
- 1 lemon, zest only
- 12 teaspoons coarse salt
- 1⁄4 cup champagne
- 3 tablespoons olive oil, lemon flavored
directions
- Salt and pepper chops and let sit 30 minutes.
- Place skillet over medium heat and add olive oil. Brown chops on both sides.
- When browned, deglaze the pan with the champagne, reduce heat, add chops and simmer until almost done.
- While the chops are cooking, mince the garlic, salt, parsley and lemon zest together. Smash mixture into the chops, simmer a minute or two, turn and smash remaining mixture onto the other side. Simmer a couple of more minutes.
