I made these well ahead of time and allowed the fruit to really permeate and be permeated by the sparkling wine (Freixenet). It made for a delicious adult drink/dessert that my DH and I both really enjoyed.
Delicious. Served this for brunch along side a Danish Strawberry soup with champagne as a vibrant starter. Loved the way the frozen raspberries gave the bubbly a pretty color and fruity flavor. And the mangoes after sitting in the glass tasted just yummy.

This is so wonderful! I love champagne and the fruit is a nice little "bonus".
