This is a refreshing fruit filled chicken salad! It is best served over a bed of green lettuce...a little too juicy for bread unless you decrease the amount of mayo!

- 1Combine the mayonnaise, sugar, Champagne, and vinegar. Whisk together until blended.
- 2Combine the salad dressing (above) , chicken, apples, pears in a bowl, and mix well. Serve over lettuce. Sprinkle with feta cheese.
