Chalupas from a Friend

"This yummy recipe was given to me by my dear friend who got it from her friend from Argentina. I doubt that it is authentic, but it sure is tasty."

  • Boil chicken breasts in water, seasoned with salt and pepper, until chicken is done, about 15 minutes.
  • Drain chicken, reserving 1 cup of liquid.
  • Shred chicken.
  • Combine chicken with shredded cheddar and jalepeno.
  • Divide mixture evenly in tortillas, wrapping them like burritos.
  • Place filled tortillas in a greased 9 inch square baking pan.
  • Combine sour cream with reserved liquid.
  • Pour sour cream mixture over tortillas.
  • Bake covered with foil in a 350 degree oven for twenty minutes or until sauce is bubbling, removing the foil for the last five.
  • Serve plain or with salsa.

  1. Very simple and delicious. Only difference was I added yellow onions to broth and put them in with the chicken mixture. Used my hand mixer to really shred the chicken. Then broiled a few minutes in oven at the end to finish them off. DH was impressed to say the least. Don't forget the margaritas!

I work at home - which is delightful and tedious at the same time. One of the delightful parts if the baking breaks, followed by the cookie breaks. I love to cook and bake. I once worked as assistant kitchen manager at a conference center and would feed anywhere from 15-4000 people at meal. I loved it! But I still have trouble cooking the right amount for me and my husband - I always end up with lots of leftovers.
