  • Wash and sort beans.
  • Soak beans overnight.
  • Drain soaking liquid.
  • Place all ingredients in large pan.
  • Cover with water, bring to a boil, reduce heat to simmer and cook 4-6 hours or until meat falls apart and is tender.

  1. I loved the addition of pinto beans and the spices were mild enough for us gringos from New England. I think the beans absorb too much of the pork flavor. Next time I would brown the pork first and maybe even add some beef bouilon granules to boost the flavor. Thanks Bertha C for a great comfort food dish.

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time. I like tasty, quick-fix meals that use ingredients that are usually in my house and don't require an extra trip to the store. When I'm not waiting on my family or working, I like to do counted cross-stitch and recently started a new hobby----quilting.
