I loved the addition of pinto beans and the spices were mild enough for us gringos from New England. I think the beans absorb too much of the pork flavor. Next time I would brown the pork first and maybe even add some beef bouilon granules to boost the flavor. Thanks Bertha C for a great comfort food dish.

  1. Wash and sort beans.
  2. Soak beans overnight.
  3. Drain soaking liquid.
  4. Place all ingredients in large pan.
  5. Cover with water, bring to a boil, reduce heat to simmer and cook 4-6 hours or until meat falls apart and is tender.
