Chai-Spice Banana Bread

"I can't claim credit for this fantastic recipe, but I can sure pass it on! This recipe features spices found in a good cup of Chai, and packs a lot of banana flavor."

  • Preheat oven to 350º. In a large mixing bowl, mix butter into mashed bananas. Add sugar, egg and almond extract. Sprinkle baking soda, baking powder, spices and salt over entire mixture and mix well. Add flour and nuts last and mix well. Pour batter into buttered loaf pan. Bake 60-75 minutes. Cool on a rack before removing from pan.

  1. I had to bake mine an extra ten minutes, but I'm sure that's just my ancient oven. I doubled the recipe, added macadamia nuts, and a half teaspoon each of nutmeg and clove. Moist, spicy, delicious! My family and coworkers loved it.
     
  2. The original recipe gets 4 stars because the loaf was quite small and cupcakes filled a bit too sparingly. With that said - the person who shared her modifications on here (with fresh ginger, applesauce etc.) was misleading. That was a TON of fresh ginger and tasted so spicy and chewy that I had to throw it out. Maybe if i had cooked some of the heat out of it first it would have been edible - not sure tho. I love Chinese 5 spice though, and sub it for many recipes.
     
  3. I really loved this bread! But i changed it a little. <br/>I actually made it twice the way you have it here but yesterday I changed it up and gotta say I liked it more the second time. I'll tell you what I did:<br/><br/>I ommitted the bananas (cuz I didnt have any)<br/>I used white sugar instead (which I would usually use brown but i just didnt have anymore). All it seemed to do was give the bread a lighter color.<br/>ommited almond extract<br/>ommited the allspice and used chinese five spices instead (about a teaspoon)<br/>I think I used a bit more cardomon<br/>a bit more cinnamon<br/>ommitted the salt<br/>I added half a cup of chopped fresh ginger<br/>and added about a cup of apple sauce.<br/><br/>It was really good! But thanks so much because I don't think I would have been able to do without having your recipe to follow!

I'm not a very good cook, but i sure like to try! I enjoy baking and dessert-making most, but would like to learn to better prepare meats and other main dishes.
