If you want to make your own chai from scratch, just use your own spice mixture instead of a commercially available tea masala. Please feel free to add more or fewer spices to this recipe, depending on your taste.

I used rooibos because I wanted a caffeine free chai. This was very good. I added some half & half & a bit more sweetener then it was really good. ;) I think using 1/2 & 1/2 instead of milk (i had used whole) would be a good idea. Simmering the tea was strange to me as I always read that you add the tea after simmering the spices. But it all worked out. Oh, I also tripled the recipe. ;) Made for My 3 Chefs 10/2013

  1. Combine the water, tea, cardamom, cinnamon stick, cloves and 1 teaspoon of the sugar, and the peppercorns, if desired, in a large saucepan and simmer over low heat for 5 minutes. Add the milk and the rest of the sugar. Add the ginger 1 to 2 minutes after that, or when the mixture is back to a simmer. Wait for 15 to 30 seconds and then strain the tea into 2 cups.
  2. VARIATION: To make Chai II without milk and sugar, combine the water, tea, cardamom, cinnamon stick, cloves and peppercorns, if desired, in a large saucepan and simmer over low heat for 5 minutes. Add the ginger, wait 15 to 30 seconds and then strain the tea into 2 cups.
