- 1 1⁄2 lbs chuck roast
- 1⁄2 lb bacon
- 1 (14 1/2 ounce) can fire-roasted tomatoes
- 1 (15 ounce) can pinto beans
- 1⁄2 onion
- 1⁄2 green pepper
- 1⁄2 red pepper
- 5 jalapenos
- 2 garlic cloves
- 1 (12 ounce) can chipotle chiles in adobo
- 1 1⁄2 tablespoons Worcestershire sauce
- 1⁄2 teaspoon cumin
- 1⁄2 tablespoon liquid smoke
- 1 tablespoon chili powder
- 1⁄2 tablespoon paprika
- 1⁄2 teaspoon pepper
- 1 (6 ounce) can tomato paste
- 8 ounces beer
directions
- Seeding or reducing the number of jalapenos will reduce the heat of the chili.
- Cook bacon, reserve fat.
- Cube roast and brown in some of the fat.
- Chop vegetables and saute in some of the bacon fat.
- Place everything in slow cooker on high for 4 hours, then reduce to low for 4 hours.
