What could be easier. A great way tob use up that left over celery
- 4 cups chopped celery
- 3 medium onions
- 1 cup grated cheese
- 1 1⁄2 cups walnuts
- 3 cups fresh breadcrumbs
- 2 cups tomato juice
- 3 eggs
- Beat eggs then add remaining ingredients in the order given,.
- Grease a loaf tin or casserole dish, and place celery mix in.
- Bake 180C for approx 60 minutes.
The flavor of this loaf was good, but I didn't really care for the texture. The celery was still fairly hard, but the surrounding loaf was pretty mushy. I will try slicing the loaf and broiling the slices to give it a more firm consistency. Also, it would probably improve the loaf if the celery and onions were sauteed before adding to the mixture. With a couple of small changes, I think I would enjoy this quite a bit. Thanks for posting!
