An easy comfort food with a fancy name. Came from a recipe book called Quickies.

We enjoyed this soup - a great way to use up extra celery quickly! I did add a teaspoon of Garlic Plus and a teaspoon of ginger paste.

  1. Saute 1 chopped onion in 1 T butter until softened, about 5 minute.
  2. Stir in 1 T flour.
  3. Stir in chicken or Vegetable broth which ever you are using and fresh ground black pepper.
  4. Add 2 cubed peeled potatoes and 1 bunch sliced celery, about 6 cups.
  5. Bring to a boil. Cover and simmer, from 20 - 25 minutes.
  6. Puree in a food processor or blender.
  7. Reheat with 1 cup milk.
  8. Serves 4 - 6.
