A somewhat unusual recipe. Celery is actually quite good in this side dish.

- Prehaet oven to 325 degrees. Lightly spray a 2-qt casserole dish with nonstick cooking spray.
- Cook celery, onion and garlic in small amount of boiling salted water until tender (about 20 minutes). Drain.
- Pour into prepared casserole dish. Top with tomatoes and bacon, then sprinkle with parmesan cheese.
- Bake at 325 degrees for 30 minutes.
I had a bunch of celery to use up and this was a good way to do it. I also enjoyed the leftovers mixed with flakes of turkey the next day for lunch. Thanks for posting this!
I am not that fond of celery, but was given a bunch of it, so I decided to try this. I had never heard of cooked celery outside of stew or gumbo. I made this with extra garlic and served it over whole wheat "egg" noodles. It was actually quite enjoyable, in spite of all that celery! Thanks.
